Sonshines Favorite Recipes for Sweet Bread
and for delicious Muffins: Add 1/2 cup more sugar or equivalant sweetener to Sweet Bread or 1 cup to Sandwich mix pour into muffin or lined loaf pan.
Tips: Leave line paper on baked bread. You can substitute 2 1/2 tbsp ground flax seed mix with 3 tbsp water, whip together add to batter to replace 1 egg. Icing Recipe: Mix 2 cups icing sugar, 1 tbsp margarine 7 to 10 tbsp of water whip icing until hard to stir, removing all lumps, (for cocoa icing add 3/4 cup cocoa), apply to cool cake or loaf.
Pineapple & Coconut: Add ½ cup coconut, ½ cup pineapple to batter, put icing on when done, then sprinkle with coconut.
Lemon Poppy Seed: Add rind of 1 lemon, 2 tsp poppy seed to batter.
Date & Nut: Add ½ cup chopped date, ½ chopped walnuts to batter, put icing on when done.
Mocha: Add 2 tbsp powdered coffee, 3/4 cup cocoa & ½ cup sugar to batter, put icing on when done.
Maple Walnut: Add 2 tsp maple extract, ½ cup real maple syrup, ½ chopped walnuts to batter, put icing on when done add few drops maple extract to icing.
Pumpkin: (Cut back on water to 1 cup). Add 3/4 cup pure pumpkin, ½ tsp ginger, ½ tsp clove, 2 tsp cinnamon, add more flour if needed.
Apple & Cranberry: Add 3/4 cup chopped apples, ½ thawed and chopped cranberries.
Lemon Cranberry: Add rind of 1 lemon, ½ cup thawed and chopped cranberries to batter.
Orange & Cranberry: Add rind of 1 orange, ½ cup thawed and chopped cranberries to batter.
Ginger Cake: Add 1/4 cup brown sugar, 1 tsp ginger, 1 cup raisins ( optional), put icing on when done. (optional).
Cinnamon Raisin: Note:(Do not add extra 1/2 cup sugar as directed at top of page) Add 1 cup of raisins to batter, 3 tsp cinnamon with 1/8 cup of sugar mixed, swirl into batter.Put on icing when done (optional).
Marble cake: Make sweet bread divide in half, add ½ cocoa and 1/4 cup sugar to half mixture blend well, swirl into other half batter.Put on icing when done.
Apple & Spice: Add 3/4 cup apples to batter, 3 tsp cinnamon and 1/8 sugar, swirl into batter, put on icing when done sprinkle with cinnamon(optional).
Banana Walnut: add 1 1/2 mashed banana, ½ cup chopped walnuts to batter.
Banana Carob: Add 1 1/2 mashed banana, 3/4 cup sweet carob to batter.
Banana Choc chip: Add 1 1/2 mashed banana, 3/4 choc chips to batter.
Chocolate Cake: Add 3/4 cup cocoa & ½ sugar to batter mix well.Put on icing when done.
Blueberry or Raspberry: Add 3/4 cup fresh or (thawed) berries to batter mix throughly then fold in 1/2 cup more berries stir twice to make a swirl (ice if desired).
Sonshines Favorite Recipes for Sandwich Bread (Tip: substitute 2 1/2 ground flax seed mix with 3 tbsp water fto replace 1 egg.
When bread is baked, leave line paper on baked bread, to keep fresher slice it, put wax paper
in between each slice, place in zip lock freezer bag and freeze.Take out as needed.
Flax Seed: Add ½ cup ground flax seed to batter.
Herb & Garlic: Add 4 tbsp Italian seasoning, 1 crushed garlic clove.
Sesame seed: Add ½ cup sesame seed to batter.Note grind seeds.
Multi Grain: Add ½ cup each ground flax seed, ground sunflower seeds,
½ hemp seed. For cheese bread add 1 cup small cubed old cheddar to mixed batter.
Pastry Recipe:
Take 3 cups of Pastry Mix, 1 cup of shortening (Crisco)add 10 tbsp of cold water, or 1 cup of lard (TenderFlake) 12 tbsp of cold water.
Blend in food processor or mixer, add a bit more of mix if needed.
Can roll out for pies. When rolling, use Sonshines Pastry Mix to dust rolling surface dust well. To make tarts use tart press. Bake until golden brown.
Cookie Recipe:
Use one for one (1:1) as in regular flour recipes, add a bit more marg if needed and 3 to 5 tsp water..
Shortbread:
* 1/3 cup of Butter
* 1/4 cup of Margarine
* 1/2 cup of Icing sugar
* 1/8 tsp. of Nutmeg (optional)
* 2 tsp. of Vanilla extract
* 2 cups of Sonshines' Mix
* Pinch of salt
* 3-5 tsp. of water
* Do not add more than 5 tsp water
Roll out on board, dust Sonshines mix. Cut with cookie cutter or use a plastic cup or use cookie press, place on nonstick cookie sheet. Tip: If cracking add a bit more margarine to dough. Bake at 325F for 8 -10 10 minutes or light gold br(Tip put sprinkles on before baking).
Choc Chip:
* 1 cup of Margarine
* 1/4 tsp. of salt
* 2 eggs
* 1/2 tsp. of Baking Powder
* 1tsp. of Vanilla extract
* 1 cup of Brown Sugar
* 2 1/2 to 3 cups of Sonshines' mix
Add only 2 cups of mix, mix well than add the other mix, add choc. Chips. Roll out on floured surface using Sonshines mix, cut out and place on nonstick cookie sheet. Bake at 330F for 12 minutes.
Butter Tarts:
* 1 cup of brown sugar
* 1/3 cup of butter or margarine
* 2 eggs
* 2 Tsp vanilla extract
* 1/2 cup of raisins or pecans
mix together well and fill tarts. |
